Are Parisian macarons gluten-free?
Traditional Parisian macarons are gluten-free by default. The classic shell uses almond flour, egg whites, and sugar only. Still, in regular bakeries, there is a chance of cross-contact with wheat products.
The shell may be fine for people who avoid gluten. But the filling has to be checked too. Ganache, buttercream, and jam should be labelled and confirmed. Some newer flavour mixes may include cookie bits, barley malt, or other added thickeners that can carry gluten. For coeliac travellers, buy from places that focus on gluten-free baking. Or choose well-known brands that clearly manage their ingredients, like Pierre Hermé or Ladurée. Also look for signs that they keep the kitchen areas separate and control supply handling closely.
